Ingredients

  • 2 cups broccoli florets, chopped and steamed
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 2/3 cup breadcrumbs
  • 2 eggs, beaten
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper, to taste
  • Extra breadcrumbs for coating
  • Olive oil spray

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix the steamed chopped broccoli, cheddar cheese, Parmesan, breadcrumbs, eggs, garlic powder, onion powder, salt, and pepper.
  3. Scoop out a tablespoon of mixture and roll into balls. If it’s sticky, wet your hands slightly.
  4. Roll each ball in extra breadcrumbs to coat and place them on the prepared baking sheet.
