- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. 
- In a large bowl, mix the steamed chopped broccoli, cheddar cheese, Parmesan, breadcrumbs, eggs, garlic powder, onion powder, salt, and pepper. 
- Scoop out a tablespoon of mixture and roll into balls. If it’s sticky, wet your hands slightly. 
- Roll each ball in extra breadcrumbs to coat and place them on the prepared baking sheet. 
- Lightly spray each ball with olive oil spray. 
- Bake for 22–25 minutes until golden brown and crisp on the outside. 
- Serve warm with your favorite dipping sauce or on their own—they hold up either way.
