Preheat your oven to 375°F (190°C). Grease a large baking dish with olive oil or non-stick spray.
Wrap each pork chop with a slice of bacon and secure it with a toothpick if needed. Season both sides with salt, pepper, and Italian seasoning.
In a skillet over medium heat, melt the butter. Add garlic and sauté until fragrant, about 1 minute.
Add the bacon-wrapped pork chops to the skillet and sear for 2–3 minutes per side until golden. Remove from heat.
In the greased baking dish, arrange the sliced potatoes in layers. Sprinkle with onion powder, paprika, and a bit of salt.
Pour the heavy cream over the potatoes and top with shredded cheddar cheese.
Place the pork chops on top of the cheesy potato mixture.
Cover with foil and bake for 30 minutes. Then remove foil and bake uncovered for another 10–15 minutes until the top is golden and bubbly.
Garnish with fresh parsley before serving, if desired.
