Bacon Wrapped Pork Chops with Cheesy Potato Bake

Let’s be honest, some dinners just feel like a warm hug after a long day—and these bacon wrapped pork chops with cheesy potato bake do exactly that. They strike a balance between comfort food and “wow, I actually made this?” kind of pride. The savory pork chops, wrapped snug in smoky bacon, sizzle away in a garlic butter bath while the creamy, cheesy potatoes bubble up in the oven, begging for a fork (or let’s be real, a spoon). I’ve made this for date nights, weekday dinners, and even one backyard potluck where they vanished faster than I could say ‘help yourself’. It’s the kind of dish that feels like home, yet totally shows off your inner chef. Whether you’re looking for recipes for pork chops, dreaming up a new recipe for pork loin chops, or exploring Bacon Wrapped Pork Tenderloin Recipes, this one hits all the marks. Plus, who doesn’t love good old-fashioned pork recipes that actually get requested again? So if you're after pork dishes that satisfy and impress—without the need for a culinary degree—this one's for you. And yes, I’m speaking from experience. Let’s get cooking.

Ingredients

  • 4 boneless pork loin chops
  • 4 slices of bacon
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • 6 medium potatoes, thinly sliced
  • 1 cup shredded cheddar cheese
  • 1 cup heavy cream
  • 1/2 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1 tablespoon olive oil
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a large baking dish with olive oil or non-stick spray.
  2. Wrap each pork chop with a slice of bacon and secure it with a toothpick if needed. Season both sides with salt, pepper, and Italian seasoning.
  3. In a skillet over medium heat, melt the butter. Add garlic and sauté until fragrant, about 1 minute.
  4. Add the bacon-wrapped pork chops to the skillet and sear for 2–3 minutes per side until golden. Remove from heat.
  5. In the greased baking dish, arrange the sliced potatoes in layers. Sprinkle with onion powder, paprika, and a bit of salt.
  6. Pour the heavy cream over the potatoes and top with shredded cheddar cheese.
  7. Place the pork chops on top of the cheesy potato mixture.
  8. Cover with foil and bake for 30 minutes. Then remove foil and bake uncovered for another 10–15 minutes until the top is golden and bubbly.
  9. Garnish with fresh parsley before serving, if desired.
