- Microwave the potatoes in a microwave-safe bowl with a splash of water for 6–8 minutes until just fork-tender. 
- Season the steak cubes with salt and pepper. 
- Heat olive oil in a large skillet over medium-high heat. Sear steak bites in batches until browned and cooked to desired doneness. Remove from pan and set aside. 
- In the same skillet, melt butter over medium heat. Add garlic, rosemary, and thyme, sauté for 1 minute. 
- Add microwaved potatoes to the pan, toss them in the herb butter, and cook until crispy and golden on the edges. 
- Return steak bites to the pan and stir to combine with the potatoes. 
- Garnish with fresh parsley and serve warm.
