Ingredients

  • 2 cups mashed potatoes (leftover or fresh)
  • 3 large eggs
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped chives
  • Salt and pepper, to taste
  • Butter or nonstick spray, for greasing

Instructions

  1. Preheat your oven to 400°F. Grease a muffin tin with butter or spray.
  2. In a large bowl, combine mashed potatoes, eggs, cheddar, Parmesan, chives, salt, and pepper. Mix until smooth.
  3. Scoop the mixture into the muffin tin cups, filling each about 3/4 full.
  4. Bake for 30–35 minutes until the tops are golden and lightly crispy.
  5. Let cool a few minutes before popping them out with a spoon. Serve warm.
