- Steam or blanch the broccoli until tender, then chop it into small pieces. 
- In a large bowl, mix the eggs, flour, Parmesan, green onions, and garlic. Season with salt and pepper. 
- Stir in the broccoli until everything’s well combined. 
- Heat olive oil in a skillet over medium heat. 
- Scoop about 2 tablespoons of the mixture per fritter and flatten slightly in the pan. 
- Cook each side for 3–4 minutes or until golden brown and crisp. 
- Transfer to a paper towel–lined plate to drain excess oil. 
- Serve warm, with your favorite dip or sauce.
