- Preheat oven to 400°F (200°C). 
- Toss potatoes with half the olive oil, half the garlic, salt, pepper, and half the parmesan. 
- Spread potatoes on a baking sheet. 
- Rub chicken thighs with remaining olive oil, garlic, Italian seasoning, salt, pepper, and parmesan. 
- Nestle chicken among the potatoes. 
- Roast for 40–45 minutes until chicken is cooked through and potatoes are golden. 
- Broil the last 2–3 minutes if you want crispier skin. 
- Sprinkle with chopped parsley before serving.
