Ingredients

  • 6 bone-in, skin-on chicken thighs
  • 1.5 pounds baby potatoes, halved
  • 3 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup grated parmesan cheese
  • Chopped fresh parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss potatoes with half the olive oil, half the garlic, salt, pepper, and half the parmesan.
  3. Spread potatoes on a baking sheet.
