Ingredients

  • 2 slices of sandwich bread (white, wheat, or sourdough)
  • 2 large eggs
  • 2 slices Swiss cheese (or cheddar, gouda, etc.)
  • Butter or oil for greasing
  • Salt and pepper to taste
  • Optional toppings: chopped chives, red pepper flakes, diced ham

Instructions

  1. Preheat your toaster oven to 375°F. If it has a bake setting, use that.
  2. Lightly grease a small baking sheet or line it with parchment paper.
  3. Place the slices of bread on the baking sheet. Using a spoon, press down the center of each slice to create a shallow well.
  4. Crack an egg into each well. Don’t stress if a little spills over—it still tastes great.
  5. Top each egg with a slice of cheese. If it’s a bit large, tear it to fit.
  6. Bake for 10 to 12 minutes, or until the egg white is set and the yolk is how you like it.
  7. Add salt, pepper, and any extra toppings you like. Serve warm and devour.
