Ingredients

  • 8 rice paper wrappers
  • 4 oz rice noodles
  • 1 block extra-firm tofu, pressed and sliced
  • 1 cup shredded red cabbage
  • 1 cup julienned carrots
  • 1 cup sliced cucumber
  • 1 cup fresh mint leaves
  • 1 cup fresh cilantro
  • 1 tablespoon oil (for tofu)

Instructions

  1. Cook the rice noodles according to the package. Rinse with cold water and set aside.
  2. Heat oil in a pan over medium heat. Cook the tofu slices until golden on both sides. Let cool.
  3. Fill a shallow dish with warm water. Dip one rice paper in for about 10 seconds until soft.
  4. Lay the wrapper flat. In the center, layer a few pieces of tofu, a small handful of noodles, and a bit of each vegetable and herb.
  5. Fold in the sides, then roll tightly from the bottom up. Repeat with remaining ingredients.
  6. Serve with your favorite peanut or hoisin dipping sauce.
