- Line a 9x5-inch loaf pan with parchment paper so it hangs over the sides. 
- In a mixing bowl, stir together the vegan yogurt, maple syrup, and vanilla extract until smooth. 
- Pour the mixture into the prepared pan and smooth it out with a spatula. 
- Top evenly with berries, chopped pistachios, hemp seeds, and lemon zest. 
- Place the pan in the freezer for 4–6 hours or until firm. 
- Once frozen, lift out of the pan using the parchment and slice into bars. Let sit at room temp for 5 minutes before biting in.
