Ingredients

  • 2 cups plain unsweetened vegan yogurt
  • 3–4 tablespoons maple syrup (adjust to taste)
  • 1 teaspoon pure vanilla extract
  • 1 cup fresh or frozen mixed berries
  • 2 tablespoons pistachios, chopped
  • 1 tablespoon hemp seeds (optional)
  • Zest of 1 lemon (optional)

Instructions

  1. Line a 9x5-inch loaf pan with parchment paper so it hangs over the sides.
  2. In a mixing bowl, stir together the vegan yogurt, maple syrup, and vanilla extract until smooth.
  3. Pour the mixture into the prepared pan and smooth it out with a spatula.
  4. Top evenly with berries, chopped pistachios, hemp seeds, and lemon zest.
  5. Place the pan in the freezer for 4–6 hours or until firm.
  6. Once frozen, lift out of the pan using the parchment and slice into bars. Let sit at room temp for 5 minutes before biting in.
