- In a large bowl, mix olive oil, garlic, paprika, salt, and pepper. 
- Add the chicken chunks and toss until fully coated. Let marinate for 10–15 minutes. 
- Thread the marinated chicken onto skewers. 
- Preheat grill or grill pan over medium heat. Lightly oil the grates if using a grill. 
- Grill the skewers for 10–12 minutes, turning occasionally, until the chicken is cooked through. 
- Sprinkle Parmesan cheese over the hot skewers, turning them so all sides get cheesy. 
- Grill 2–3 minutes more until cheese is golden and slightly crisp. 
- Remove from grill and let rest for a couple of minutes before serving. 
- Garnish with parsley if desired. Serve hot.
