- In a glass, mix chia seeds with water and let them sit for 10 minutes. This lets the seeds expand and get jelly-like. 
- After the chia seeds have soaked, stir in the lemon juice, grated ginger, turmeric, and honey if you're using it. 
- Stir well. You want everything evenly mixed. The turmeric might try to clump, but show it who's boss. 
- Drink it right away for a zingy start to your day. Or refrigerate for 15 minutes if you prefer it chilled.
