Ingredients

  • 2 cups mashed potatoes, chilled
  • 1 cup diced cooked ham
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped green onions (optional)
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 1.5 cups breadcrumbs
  • Oil for frying

Instructions

  1. In a large bowl, mix mashed potatoes, diced ham, cheese, green onions, garlic powder, salt, and pepper until well combined.
  2. Form the mixture into small balls or logs using your hands.
  3. Roll each croquette in flour, dip in beaten eggs, and coat with breadcrumbs. Set aside on a plate.
  4. Heat oil in a deep skillet over medium heat. Fry croquettes in batches until golden brown and crispy, about 2-3 minutes per side.
  5. Remove and drain on paper towels. Let cool slightly before serving.
