Ingredients

  • 5 small flour tortillas
  • 1 tablespoon cinnamon
  • 1/2 cup sugar
  • 1 tablespoon butter, melted
  • 1 apple, peeled and chopped
  • 2 tablespoons brown sugar
  • 1/4 teaspoon cinnamon (for apples)
  • 1 tablespoon water
  • 1/2 cup cream cheese, softened
  • 1/2 cup heavy whipping cream
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons powdered sugar

Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. Brush tortillas with melted butter and coat with cinnamon sugar mixture.
  3. Fold tortillas over the oven rack bars to create taco shells and bake for 5-7 minutes.
  4. In a saucepan, cook chopped apples with brown sugar, cinnamon, and water until tender.
  5. In a bowl, beat cream cheese until smooth. Add powdered sugar, vanilla, and beat again.
  6. Whip heavy cream separately and fold into the cream cheese mixture.
  7. Fill cooled taco shells with cheesecake mixture and top with apple filling.
  8. Serve immediately or chill briefly for a firmer texture.
