- In a large pot, heat the olive oil over medium heat. 
- Add diced onion and cook until soft, about 5 minutes. 
- Stir in minced garlic and cook for another minute. 
- Add sausage and cook until browned. 
- Toss in diced potatoes, chicken stock, corn, and smoked paprika. 
- Bring to a boil, then reduce heat and simmer for 20 minutes or until potatoes are tender. 
- Stir in cream, season with salt and pepper, and simmer for another 5 minutes. 
- Taste and adjust seasoning as needed. 
- Serve hot, garnished with chopped parsley or green onions.
