Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Unfold the puff pastry and cut it into 8 equal rectangles.
In a bowl, mix cream cheese, sugar, and vanilla until smooth.
Spoon a tablespoon of the cream cheese mixture onto the center of each pastry rectangle.
Top with a teaspoon of strawberry preserves.
Fold in the corners slightly and brush edges with egg wash.
Bake for 15–18 minutes until golden and puffed.
Let cool slightly and dust with powdered sugar if you’d like.
